Whole Wheat Banana Waffles with Chocolate Syrup

These are not your typical waffle. These are decedent, delicious and dreamy. Definitely not drab.

If you have a Belgium Waffle maker, I highly recommend it for this recipe.


Banana Whole Wheat Waffles
Wet Mixture:
  • 2 cups Mashed Bananas (3 large, or 4 small/medium)
  • 2 cups Milk 
  • 1 cup Almond Milk (or substitute more milk or some cream)
  • 2 TBL melted Butter (or Coconut Oil), cooled
  • 2 tsp Vanilla
  • 1 tsp Almond Extract (Optional, but a nice flavor with the Almond Milk)
Dry Mixture:
  • 2 cups All Purpose flour
  • 2 cups Whole Wheat Flour (you can do all whole wheat if you choose)
  • 2 TBL Baking Powder
  • 1/2 cup Brown Sugar
  • 1/2 tsp Salt
  • 1-2 tsp Cinnamon (or other spice of choice)
Eggs:
  • 2 eggs, separated and Whites whipped to stiff peaks.
  1. Combine all dry ingredients well.
  2. Add the egg yolks to the wet mixture.
  3. Whisk together all the dry ingredients.
  4. Stir dry ingredients gently into the wet mixture.
  5. Fold the beaten egg whites carefully into the batter.
  6. Make certain that your waffle iron is well oiled as these are a little stickier than normal waffles due to all the natural sugar in the bananas.
CHOCOLATE-MAPLE SYRUP:
  • 1/2 cup Maple Syrup
  • 1 -2 TBL Chocolate Spread of Choice (depending on how rich you want the flavor)
  1. Combine the ingredients and heat briefly to melt the chocolate.
  2. Serve warm.
  3. NOTES: You can make this syrup in any amount, just use 1 part Chocolate Spread to 5 parts Syrup in the amount you need. Also, if you don't have REAL Maple Syrup, then the fake stuff will work just fine. I did it once after I ran out of the other, and I was still pleased with the results.
