So, like many of you, I have a THING for Trader Joe's.
(That's really a THING, right? Like some people have a THING for Downton Abbey. Or cute shoes. Or, oh, I don't know....Goat Cheese. Not that I would know about ANY of THOSE things. haha.)There are just a few things I've gotten from there that I haven't totally loved, but for the most part, I am always excited when I get the chance to go and buy some TJ's yummies. There are now 2 in UT, though both of them are at least 30 minutes from me (I know, rough, right?). We REALLY need one in my neck of the woods, and I'm not the only one sayin' so. Do you hear me Trader Joe's???? Yes, I really hope you do. Station Park in Farmington would be perfect.
Anyway.....Here's how this recipe came about.
My husband and I were on our way up to my family's cabin, and we made a stop at the new TJ's that is in close proximity to the canyon. I had never looked to see if TJ's had any kind of Ice Cream product, but I figured they must, so I took a looksie in the freezer case.
And, mind blown...they had SALTED CARAMEL GELATO!! HELLO!!
Of course we bought some and enjoyed it when we arrived at the cabin.
Here's the problem. We left the next morning and I had stops to make on the way home. You know, like Costco, the Thrift Store, etc, etc. STOPS. Anyway, you can probably guess what happened to the frozen deliciousness in my cooler that wasn't loaded up with ice.
Yep. It melted. But, not to be deterred, I put it into my freezer and hoped for the best.
Later that night, I checked on it. Ummm...still yummy but not quite the texture of the God's anymore.
So my brain started thinking...what could I make with it? What could I make with it for Saturday night when we were having company over for dinner? Hey, it's Italian....I'll make Italian Food. Yes...and I'll make Pizelles because they are Italian! And I happen to have a couple of Pizelle Irons!
And there you have it. How my very own original Trader's Joe's Salted Caramel Pizelles came to be.
I might go see what other flavors of frozen delicacies they have there that I can make into something else. 'Cuz that's how I roll...I re-purpose everything....even food. Yep, I'm green like that.
And so, here you have it....the recipe that will maybe, just MAYBE, rock your cookie world.
SALTED CARAMEL PIZELLES:
2 cups Melted Salted Caramel Gelato
1/2 cup Sugar
3 Eggs, lightly beaten
1/2 cup Melted Butter
1 tsp Vanilla Bean Paste (or extract)
3 3/4 cups AP Flour
4 tsp Baking Powder
1/2 tsp Fine Sea, Kosher or Fleur de Sal Salt
Combine liquid ingredients with a mixer until well blended. Combine dry ingredients in a separate bowl using a whisk to blend and aerate. Add slowly to wet mixture. Let sit for 20-30 minutes before scooping onto a hot and greased Pizelle Iron. Bake according to preference.
If you like, you can add other flavorings to the mix according to your flavor preferences. I like them straight up salted caramel-y, but traditional Pizelles have Anise added (I can't stand that flavor, but if you like it, go for it). You could also add Cinnamon.
So.....Do you need a Pizelle Iron to make Pizelles? Yes. Could you press them flat by hand for a flat cookie? Maybe. Would they be as pretty? No. So, here are a few to check out:

I would recommend one that does more than one at time, and the prices vary GREATLY. Some are in the hundreds. They also come in different sizes for the finished cookie. I found one of mine at a thirft store, so keep your eyes open! Just make sure to get one that is non-stick! Once you make them, you'll get kinda hooked. You can even roll them into cone or cylinder shapes right after they come off the iron, so they're pretty darn versatile.

Wow, these look delicious Emily! I really need to get an iron. I have only made it to Trader Joes once. Sure did love it and keep wanting to go back! Thanks for sharing with SYC.
